SIOUX CITY, Iowa (AP) – Not only does Gabriella Luna attend classes all day, but the second-year nursing student at St. Luke’s College also prepares dinner for her parents and two younger siblings.
“A lot of times, I don’t have time to go shopping,” he said. “Sometimes, I don’t have enough money to buy something healthy.”
Luna is not alone, according to Kendra Ericson, president of St. Luke’s College.
“We interviewed our students, and 54% of respondents indicated that they do not have enough money for food and that they cannot afford to eat balanced meals,” Ericson told Sioux City Journal.
